As the visionary behind all of More Eatery’s wedding catering ideas, Carmen brings creativity, attention to detail, and a personal touch to every event. The History of
More Eatery
The story of More Eatery began in March 2020, when the pandemic forced Joe’s restaurant to close and Carmen had to reschedule her entire wedding season. Faced with unexpected challenges and plenty of time on their hands, they pivoted to the new normal by launching virtual dinner parties and meal drop boxes, staying connected with their community in creative ways. As restrictions eased, a few weddings, catering gigs, and some big dreams led to the opening of More Eatery in February 2023. After months of renovations, they transformed a space in Campbell River into a vibrant, family-friendly restaurant that has quickly become a gathering spot for all.
In addition to their restaurant, Carmen and Joe have also established themselves as a key player in the Vancouver Island wedding catering scene, offering exceptional service and unforgettable meals for couples across the island. Today, More Eatery continues to thrive, offering fresh, flavourful food and creating memorable experiences for all, whether at their restaurant or at a beautiful wedding celebration.
Looking ahead, Carmen and Joe are excited to continue growing More Eatery and are committed to becoming a long-standing staple in the Campbell River food scene. They are incredibly grateful for the community’s support and thank everyone who has been part of this journey.
